This unique Ethiopian heirloom coffee hails from the Oromia region. Ethiopia is the birthplace of coffee and produces some of the world's best coffee each year. In our opinion, this naturally processed coffee is one of their best. After harvest, this single farm coffee is dried on raised beds for 8-10 days; it is rotated every thirty minutes to promote even drying. It completes the drying process on concrete patios for a final 2-3 days before being shipped to us for roasting. Needless to say, great lengths are taken to ensure this coffee tastes excellent. That excellent taste ensures that Ethiopia's reputation as the world's best coffee-producing country isn't changing anytime soon. This coffee is for people who like the taste of apple, watermelon, & nectarine.

This Honduras coffee comes from a group of female-owned microlots called 18 Rabbits Farms, owned by the family matriarch, Dulce Marlen. Dulce Marlen and her husband are pioneers of both organic and biodynamic farming techniques, intentionally regenerating the soil they use for their agricultural practices. Members of the 18 Rabbit family have placed in the top 10 for the Honduras Cup of Excellence, and work together to create unique fermentations and cupping experiences for their partners. This particular lot has also earned the Organic stamp. Therefore, it is an indigenous, female-owned, organic microlot.

This natural process PNG from the Sigri Estate is generally only available for special order order before the harvest because of how difficult it is to process natural coffees in the extremely humid climate of Papua New Guinea.  The purchase of this coffee helps provide free housing, free healthcare, and free schooling to the coffee pickers and farmers who produce these unique coffees. Quality control begins in the field; Cherries are hand-picked and carefully checked for uniformity; they must be red and fully ripe which allows for the correct balance of sugar and acid within the cherry.
