Apolo is an untapped Coffee Region in Bolivia, which is a high elevation savanna. This means that hot days and cool nights stabilize coffee seed cell walls, locking in fruit forward sweetness and acidity. We get this coffee from a single farmer named Don Ricardo-making it a microlot, however, the owner of this farm is Quechua, an indigenous ethnicity to Bolivia. This is an extremely unique microlot which is one of the highest scoring coffees in the entire region. Additionally, it is rested at a height of 1900m for 3 months which locks in flavor and makes the coffee taste like fresh crop for 2-3 times longer than normal.
